From Monday, April 11 through May 22,  you can purchase Cocas flat bread wherever Companion breads are sold, order the Roasted Red Pepper Cocas at BARcelona Tapas, which is located in Clayton or print the recipe and try it at home!

cocas_davidmolina_barcelona For the marinated roasted red peppers: 6 large roasted red peppers cut into strips 1/2 red onion julienned 2 t Sherry Vinegar 1 bay leaf 1/2 t chopped garlic 1/2 T chopped parsley 1/4 cup olive oil 1/2 tsp dry thyme Salt and pepper to taste Procedure for the marinated roasted red peppers: Marinate red peppers overnight in fridge. Procedure for the cocas: Drizzle bread with olive oil and salt and pepper. Place bread on grill and cook both sides. Remove bread and top with all ingredients. Place bread in hot oven to melt cheese and serve.
