Meet William Ortmann

William Ortmann - Cardinals Nation
Chef William, a St. Louis native, joined the Cardinals Nation team before the restaurant opened in March of 2014. He has always loved cooking & pursued his passion by attending Forest Park Community college where he received his associates of applied science in Culinary Arts, as well as Hotel & Restaurant Management.

Chef William and his culinary team help create and produce the Cardinals Nation restaurant menu, game day menus & private event menus. He comes to CN after previously working for the Edwards Jones Dome, Busch Stadium and other local restaurants. As a chef with the Delaware North Sportservice team, Chef William has had the privilege to travel to other major sporting venues to offer his support for large scale events. Some of the events that he’s helped with are the 2013 NFC Championship game at Century Link Field, the 2013 MLS All-Star Game and the 2013 Cup game at Sporting Park.

In his free time, Chef William enjoys spending time with his wife and two children and golfing with friends.

What is your occupation / how do you spend your day?
I am the Executive Chef for Cardinals Nation. A normal work day for me consists of creating new menu items & working the ala carte line. Some of my day is also spent working with my culinary team to better us as a cohesive team & to mentor our staff.
Why do you choose Companion breads?
Companion breads are good quality products and a local vendor. As the Executive Chef I try my best to purchase locally instead of outsourcing.
Which Companion bread are you: Pain Beaucaire, Multigrain or Parmesan Black Pepper
Multigrain because it takes many different elements to make a great kitchen.
What three things would we always find in your kitchen/refrigerator/pantry?
Olive Oil, balsamic vinegar and Arborio rice
Name a favorite childhood food that you still eat.
Butter noodles
The band, BREAD, had a famous song, “Make It With You.” If we were making IT with you and bread, what would it be?
Bruschetta- I love olive oil, fresh tomato, garlic & bread.
