Salmon with Tomatoes and Capers

Ingredients
1loaf Companion Ciabatta,
4 salmon filets(6 ounces each)
1lb plum tomatoes,seeded and chopped
3/4cup fresh arugula,lightly packed and chopped
1/2cup extra virgin olive oil,plus additional for brushing fish
1 shallot,chopped
1-1/2tbsp fresh lemon juice
1tbsp capers,drained
lemon wedges
salt and pepperto taste
canola oilfor grill

Instructions
  1. In medium bowl, combine tomatoes, arugula, ½ cup olive oil, shallot, lemon juice and capers. Season with salt and pepper.
  2. Prepare grill for direct heat. Dip a paper towel in canola oil and using tongs, generously grease grates of grill several times.
  3. Brush both sides of salmon with olive oil; season with salt and pepper. Place salmon, flesh side down, on grill and cook about 4 minutes. Using a spatula, carefully lift from grill and turn. Grill an additional 4 minutes or until cooked through.
  4. Brush ciabatta slices with olive oil and grill to golden brown.
  5. Transfer salmon to Ciabatta slice and spoon tomato mixture over fish.
  6. Garnish with lemon wedges.
