Ingredients
Mustard Mix
1tbsp dijon mustard
1tbsp whole grain mustard
1tsp toasted mustard seed
Red Cabbage Slaw
1head red cabbage,shaved
1head green cabbage,shaved
1 yellow onion,sliced
4oz cider vinegar
3oz sugar
1tbsp salt
1tbsp mustard seed
1tsp dry mustard
1tbsp caraway seeds
Sauerkraut
1lb sauerkraut
1yellow onion, sliced
1tbsp caraway seeds
1 ham hock
Additional Ingredients
4 brats
12oz Schlafly Pale Aleor your favorite beer
4 Companion Bavarian Pretzel Rolls
4slices muenster cheese

Sauerkraut
1lb sauerkraut

1 ham hock
Additional Ingredients
4 brats
12oz Schlafly Pale Aleor your favorite beer
4 Companion Bavarian Pretzel Rolls
4slices muenster cheese

Instructions
Red Cabbage Slaw
  1. Boil vinegar, sugar, and spice mixture for 2 minutes and pour over cabbage and onion mixture. Refrigerate overnight.
Sauerkraut
  1. Combine all sauerkraut ingredients. Cover in foil and bake at 350 degrees for 1 1/2 hours. Pick the meat off of the ham hock and stir into the sauerkraut.
To Serve:
  1. Boil brats in the beer. When heated through, remove and split lengthwise. Place on grill and char slightly. Smear mustard mix on one half of Pretzel Roll. Place slaw on mustard mix, then top with brat, sauerkraut and cheese. Cover with Pretzel Roll top, and grill slightly to melt cheese. Plate and serve.
